Mushroom Soup In Transcarpathian Style With Mesta

Ingredients:

  • Carrot – 1 pc.
  • Bay leaves – 3 pcs.
  • Ground black pepper
  • Onions – 2-3 pcs.
  • Butter – 100 g
  • Vegetable oil – for frying
  • Sour cream (or cream) – 200 g
  • Flour – 2-3 tbsp. spoons
  • Water – 3-4 l
Mushroom

Cooking:

  1. Pour the mushrooms with water and leave in an open container for 15 minutes, and after this time, add water and set to boil for 1 hour. Salt to taste.
  2. Drain the liquid through a sieve into another pan, and leave the mushrooms in it. 
  3. Add carrots, bay leaf and pepper to the broth, cook until the carrots are ready. 
  4. Cut or grate the mushrooms. 
  5. Cut the onion and fry until golden brown in butter (30g) with vegetable oil (1 tsp in the process), then clean the pan. 
  6. Add the remaining butter to the pan. As soon as it melts, reduce the heat and pour in the flour, and then stir lightly. 
  7. Add sour cream to the resulting mixture and hold for 1 minute, after which pour mushroom broth 1-2 ladles until it becomes so liquid that you can simply pour it into the broth. Add nutmeg to the thinned mass. 
  8. Pour the sauce into the broth and add the onion, and then bring everything to a boil.
